CHEESE
-
Brie, Ile de France, Pasteurised Cow's Milk. A soft velvety texture with a tender bloomy rind. Mentioned anecdotally in writings dating back to the ninth century, this cheese is an absolute classic. The taste is complex and rounded and soothing, with notes ranging from mushroom to cauliflower to sauteed cabbage and leek. The pate is a rich golden colour, contrasting the bloomy whites and deeper flaxen flourishes on the rind.
-
Comte D'Estive, Franche-Comte, Unpasteurised Cow's Milk. Ivory-coloured pate, with a rich, nutty flavour and a golden brown rind. In the style of a distinct Gruyère, with a hint of caramel sweetness. We select mountain-aged cheeses stored in traditional cellars close to where they are made. The cheeses we choose are from June, July, August and September, and are available in three ages: the classic d'Estive, aged 12 - 24 months; the Reserve, aged 24+ months.
- Fourme D'Ambert, Auvergne, Pasteurised Cow's Milk. Known as the 'connoisseur’s blue cheese.' Capsule-shaped, patched with grey/white moulds on a natural thin rind. The interior is cream-coloured with smooth even marbling which never dominates the flavour. The texture is rich and mellow with a nutty subtle flavour, making it a perfect partner for fine wines as the taste is not overly aggressive.
WINE
-
Chateau Le Roc - House White
Vin de Pays D'Oc, Fronton
50% Colombard & 50% Sauvignon Blanc
The vineyards of Jean-Luc & Frederic Ribes are situated south of Toulouse & this light, zesty wine is produced from the vines of the next property as their own land is used almost entirely for red wine production. The grape varieties give a really intense aroma of grapefruit, orange & exotic fruits while the taste is fresh with an aromatic long finish. Served chilled as an aperitif or with light cheeses & simple meals.
-
Chateau Le Roc - House Red
Côtes de Frontonnais, SW France
60% Negrette with a blend of 20% each Syrah & Cabernet SauvignonJean-Luc and Frederic Ribes work their vineyard on a 32 acre property south of Toulouse. They take full advantage of the terroir in producing vigorous tasting wines. We chose this for our House Wine as it packs a punch for the money, and is extremely versatile, insofar as it pairs beautifully with cheese as well as simple style foods as well as more complex stews. Lovely hits of cherry & spice with forward tannins make this a great modern style everyday wine
